This is the very track that got me into Bob Dylan, one of my mates had Jimi Plays Monterey on video and after hearing this track on it I went out and bought Highway 61 Revisited. I don't know whose version I prefer - but I love Jimi's spoken bit at 4.57. And his version of Wild Thing in the same set would be one of my candidates for best cover ever - he takes a catchy but fairly limp tune and transforms it into a raging beast.
Oh, and I definitely prefer Dylan's version of All Along The Watchtower, because of the harmonica I think.

I prefer Dylan's version of watchtower too. But what about The Smiths version of Purple haze?
